Chiroso, an Ethiopian Landrace variety recently discovered in Colombia, has captivated coffee enthusiasts with its distinctive flavor profile. Black Moon Farm's Chiroso is genetically pure, boasting a complex array of aromas and flavors enhanced by its unique terroir. This marks the farm's second harvest from plants cultivated four years ago.
Harvested during the waning moon in Libra, the beans underwent 48-hour anaerobic fermentation followed by a 12-hour oxidation period, then drying in a dark room for 60 days and finally rested in sealed bags for 4 months.
