About this lot
The Venus lot cherries were harvested in a very special area of the El Salto farm known as El Choclo. It is a mountainous area with great shadow cover. After selecting the cherries, they were pulped and placed in a cold water tank for three days to remove the mucilage, followed by 27 days of drying under the sun. This process has yielded a sweet and floral cup.

About Chevas Coffee Estate
José Luis Chevas embarked on his journey in the coffee production world in 2016 at the age of 18, following in his grandfather’s footsteps. His grandfather, Luis Victor Chevas, established his initial farm in the Alto Chiquero region of Boquete, back in the 1970s. At first, the farm was dedicated to large-scale agricultural production, mostly of potatoes and onions. Later, two other farms were added in El Salto and Alto Quiel, each boasting distinctive microclimates and fertile, organic-rich soils. These farms, with elevations ranging from 1,500 to 1,750 m.a.s.l. enabled diverse coffee plants to thrive. However, it wasn’t until 1996 that José Luis’ grandfather decided to focus on coffee production.

Chevas Coffee Estate was established with the idea of bringing coffee producer and baristas together to experiment and develop unique cup profiles. Thus in 2016, José Luis partnered with Adrian Villarreal, the 2020 Panama Barista Champion, and in a very short time, they have produced unique and complex lots that have attracted the attention of world champions and international competitors.

Chevas Coffee Estate is known for growing a range of coffee varieties, including Caturra, Marogogype, Catuai, Typica, and the globally acclaimed Geisha.
